"Lasagna" Wrangled


 "Lasagna" Wrangled!

Sometimes you just have to have your favorite foods. But you don't want to use all of your points in the process. This lasagna will help you to scratch your lasagna itch for only 3.5 points a serving! (1/4 of an 8x8 baking dish)




1 pound ground turkey (98% or 99% fat free)
2 tablespoons onion, chopped 
1/8 teaspoon garlic powder
1 cup spaghetti sauce (Make sure it's one that is 6 points for 1 cup)
8 ounces fat free cream cheese -
1 egg
1/8 teaspoon pepper
10 ounces frozen chopped spinach, thawed & drained
4 ounces fat-free mozzarella, shredded
2 tablespoons parmesan cheese (in the can)

Brown the turkey with the chopped onion.
Mix in the garlic powder and spaghetti sauce. Heat until bubbly.
Soften the cream cheese in a medium-size bowl for 50 seconds.
Stir until creamy, beat in the egg and pepper.
Stir in the spinach.
Spread half of the meat mixture evenly on the bottom of a greased 8 x 8 glass baking dish.
Spread the spinach mixture over the meat, top with mozzarella, then the rest of the meat. (May not cover.)
Sprinkle with the parmesan cheese.
Bake at 350 for 30 minutes until hot and bubbly.
Let stand for 3 minutes before serving.

Pizza Wrangled - Eat the whole thing for THREE POINTS!

Pizza. Oh how I love you. And oh how I've missed you. No cauliflower crust or flat-out could ever, ever compare to the crispness and the chewiness and the general yuminess and satisfaction of a pizza. Pico de Pollo - Protein packed and ZERO points!

I call it Pico de Pollo. The name is nonsense. But the taste is serious. It's basically pico de gallo with grilled, shredded chicken in it, which means three things - it's delicious, it's packed with protein, and IT'S ZERO POINTS. Have fourteen of my extra crunchy chips and you've got yourself a heaven snack or meal!
