My fiance works from home every other week, which means I usually make lunch for her. She joined Weight Watchers seven weeks ago. I do my best to keep meals interesting to make staying on the wagon more fun than falling off! Today I make her chicken pitas with slices of apple and sections of orange. Instructions for making the pitas can be found here.
Ingredients
2 Two-ingredient pitas
Chicken breast
Bag salad (or other salad greens)
1tsp fat free vinaigrette
Pam
Directions
Spray a frying pan with Pam cooking spray. Heat pan to medium heat.
Place the pitas in the pan to warm. Approx. 2-3 minutes on each side.
Meanwhile, season chicken breast with salt and pepper and grill. (I love my George Foreman for recipes like this one!)
When chicken is cooked through, slice thinly.
To assemble pitas, lay flat on a plate. Line up the chicken on the pita. Top with greens. Then sprinkle each with 1/2 tsp of dressing.
Viola! Lunch!
